Peanut Butter Pie

Yummy, yummy in the tummy!

 

Ingredients

PIE

  • 2-1/2 cups milk
  • 1/2 cup sugar
  • 1/2 cup flour
  • 1/4 tsp. salt
  • 2 egg yolks
  • 1/2 tsp. vanilla
  • 1/2 cup smooth peanut butter
  • 9" pie crust (crumb crust is best)

MERINGUE

  • 2 egg whites
  • 1/4 cup sugar

Preparation

  1. Scald 1-1/2 cups of milk in top of double boiler
  2. Mix sugar, flour and salt in a bowl
  3. Add small amount of scalded milk to mixture and mix until it makes a smooth paste
  4. Add paste to milk in boiler and cook 15 minutes, stirring occassionally
  5. Pour small amount over egg yolks in a bowl & blend
  6. Return to boiler and cook 2-3 minutes
  7. Cool
  8. Stir in vanilla
  9. Put peanut butter in bowl and add 1/2 cup cold milk
  10. Beat with rotary beater until smooth
  11. Add remaining 1/2 cup cold milk
  12. Beat with rotary beater until smooth
  13. Blend peanut butter mixture into cooled custard and chill
  14. Pour into crust
  15. Make meringue by beating egg whites and sugar at high speed until they form stiff peaks
  16. Pile meringue on top of pie
  17. Bake at 350° for 15 minutes
  18. Cool before serving
