Yummy, yummy in the tummy!
Ingredients
PIE
- 2-1/2 cups milk
- 1/2 cup sugar
- 1/2 cup flour
- 1/4 tsp. salt
- 2 egg yolks
- 1/2 tsp. vanilla
- 1/2 cup smooth peanut butter
- 9" pie crust (crumb crust is best)
MERINGUE
- 2 egg whites
- 1/4 cup sugar
Preparation
- Scald 1-1/2 cups of milk in top of double boiler
- Mix sugar, flour and salt in a bowl
- Add small amount of scalded milk to mixture and mix until it makes a smooth paste
- Add paste to milk in boiler and cook 15 minutes, stirring occassionally
- Pour small amount over egg yolks in a bowl & blend
- Return to boiler and cook 2-3 minutes
- Cool
- Stir in vanilla
- Put peanut butter in bowl and add 1/2 cup cold milk
- Beat with rotary beater until smooth
- Add remaining 1/2 cup cold milk
- Beat with rotary beater until smooth
- Blend peanut butter mixture into cooled custard and chill
- Pour into crust
- Make meringue by beating egg whites and sugar at high speed until they form stiff peaks
- Pile meringue on top of pie
- Bake at 350° for 15 minutes
- Cool before serving
